Mango and Chickpea Salad

Servings 4 servings

Ingredients
  

  • 3 tbsp Tamarind Pulp
  • 3 tbsp Extra Virgin Olive Oil
  • 1 tbsp Grated Ginger
  • 1 tbsp Grated Jaggery (or) Honey
  • Salt and Black Pepper according to taste
  • 1 Salad Mango (or) Semi-Ripe Mango cut into matchsticks
  • 1 tbsp Degimirch Chilli Powder
  • 400 g Cooked Chickpeas
  • 1 Red Pepper (small dice)
  • 100 g Cooked Red Quinoa
  • 30 g Baby Radish (sliced)
  • 2 tbsp Peanuts (toasted and crushed lightly)
  • 1 tbsp toasted sesame seeds
  • 20 g Baby Salad LeavesĀ 
  • Mustard Cress (optional)

Instructions
 

  • Whisk all the ingredients of the tamarind dressing and set aside.
  • Sprinkle chilli powder over the mangoes; toss well and set aside.
  • In a large mixing bowl, combine chickpeas, quinoa, red peppers; add tamarind dressing and toss well to combine.
  • To finish, place salad leaves in the serving plate,transfer the chickpea mixture to the centre of this bowl. Add the chilli-mango,baby radish. Sprinkle peanuts, sesame seeds and cress.
