Ajo Blanco

Ajoblanco (sometimes written ajo blanco) is a popular Spanish cold soup typical from Granada and Málaga (Andalusia). This dish is made of bread, crushed almonds, garlic, water, olive oil, salt and sometimes vinegar. It is usually served with grapes or slices of melon.

Ingredients
  

  • 150 g Almond Flakes soaked for 2 hours
  • 1 Stale Sour Dough Slice soaked in little whole milk (or almond milk) for 10 mins
  • 1/2 Green Apple or Granny Smith Apple
  • 1 Small Garlic Clove
  • 1 tbsp Sherry Vinegar
  • 3 tbsp Extra Virgin Olive Oil

Garnish

  • 1 tbsp Makhana (Fox Nuts) toasted
  • 1 tbsp Pine Nuts toasted
  • 4 Large Green Grapes sliced
  • 1 tbsp Extra Virgin Olive Oil

Instructions
 

  • Strain almonds,then grind with soaked sour dough, milk, apple and garlic till smooth
  • Add vinegar ,olive oil and whizz till smooth
  • Sieve if required to get a smooth consistency
  • Check seasoning and chill for an hour before serving.
  • Pour into two shallow bowls.
  • Top with toasted makhana, pine nuts, green grapes and drizzle of olive oil
