In a small bowl, whisk all ingredients for the dressing and set side.
Peel and cut the mango into matchsticks transfer to a bowl and set aside.
Add the carrot sticks and cherry tomatoes to this bowl.
When ready to serve,add the dressing to the mango bowl and mix well.
Portion the salad into the serving plates, sprinkle with walnuts, mustard cress and shredded coconut.
Season with crushed sea salt and pepper corns and serve.
