Mango Salad
Ingredients
- 1 large salad mango
- 1 carrot, peeled and cut into matchsticks
- 8 cherry tomatoes, halved
- 1 punnet of mustard cress
- ¼ cup grated fresh-frozen coconut
- 2 tbsp roasted and crushed
- walnuts
For the dressing:
- 1 tbsp of honey
- 1 inch pc ginger, grated
- 1 lime, juice only
- 2 tbsp extra virgin olive
- oil sea
- salt to taste
- Black pepper corns to taste
Instructions
- In a small bowl, whisk all ingredients for the dressing and set side.
- Peel and cut the mango into matchsticks transfer to a bowl and set aside.
- Add the carrot sticks and cherry tomatoes to this bowl.
- When ready to serve,add the dressing to the mango bowl and mix well.
- Portion the salad into the serving plates, sprinkle with walnuts, mustard cress and shredded coconut.
- Season with crushed sea salt and pepper corns and serve.
