Mango Salad

 

Mango Salad

Servings 4 servings

Ingredients
  

  • 1 large salad mango
  • 1 carrot, peeled and cut into matchsticks
  • 8 cherry tomatoes, halved
  • 1 punnet of mustard cress
  • ¼ cup grated fresh-frozen coconut
  • 2 tbsp roasted and crushed
  • walnuts

For the dressing:

  • 1 tbsp of honey
  • 1 inch pc ginger, grated
  • 1 lime, juice only
  • 2 tbsp extra virgin olive
  • oil sea
  • salt to taste
  • Black pepper corns to taste

Instructions
 

  • In a small bowl, whisk all ingredients for the dressing and set side.
  • Peel and cut the mango into matchsticks transfer to a bowl and set aside.
  • Add the carrot sticks and cherry tomatoes to this bowl.
  • When ready to serve,add the dressing to the mango bowl and mix well.
  • Portion the salad into the serving plates, sprinkle with walnuts, mustard cress and shredded coconut.
  • Season with crushed sea salt and pepper corns and serve.
